It's been awhile before checking on you again... hope this might help with your dish.
Oh mine!!!! Stephen needs to replace the bread knife with a cleaver! You don't use a dessert spoon for soup. :)
Here is my mom's tips for the "steam ground pork dish"... 1) Always add pickled vegetables ("mui choi", or "tung choi" in the meat. 2) Stir in a couple table spoonfuls of water when you first marinade the meat. Add another few table spoonfuls right before cooking. Make sure you stir it well enough and don't even bother to ground your own meat... try to modify the dish and see if it comes out with the desire texture. Good luck!
